Latin refulgēns, shining-back — present-participle of refulgere, sharing root with fulgor (lightning). Pistacia vera, the desert tree from western Asia whose green nut has been a delicacy in Iranian and Levantine cooking for at least three thousand years. The color refers to the cotyledon meat inside the shell: a soft, slightly muted yellow-green with the warmth of plant fat.
