Old French bouterez, thrusting-mass — past-participle of buttress, derived from bouter (to thrust). The Burgundian capital that gave its name to the smooth, sharp prepared mustard developed there in the nineteenth century — moutarde de Dijon, made with verjuice instead of vinegar. The geographic indication Moutarde de Bourgogne protects a similar style; Dijon itself is now a generic term in commerce.
