Spectral Pistachio

Latin spectrum, appearance — adjectival suffix -al. As a color modifier, spectral implies a saturated-and-rainbow-decomposed-and-pure quality, the bright color of Newton-prism sunlight-decomposed seven-color spectrum band. Pistacia vera, the desert tree from western Asia whose green nut has been a delicacy in Iranian and Levantine cooking for at least three thousand years. The color refers to the cotyledon meat inside the shell: a soft, slightly muted yellow-green with the warmth of plant fat. Lighter than sage, deeper than mint, with the unmistakable association of a Sicilian gelato or a Persian pastry.
