Iridescent Endive

Latin Īris, rainbow — adjectival suffix -escent, named for the Greek goddess of the rainbow. Cichorium endivia, the slightly bitter European chicory cultivated as a salad green since Egyptian times. The color refers to the inner leaves of a head of curly endive or escarole: a soft, slightly yellow-shifted green with the matte finish of dewy lettuce. Lighter than lime, more chromatic than celery, with the cool-weather association of late-fall greenhouse production.
