Etymology
From the Greek elektron, amber — the substance whose static-electric properties were observed by Thales of Miletus. Eruca vesicaria, the Mediterranean mustard-family green — peppery and bitter, eaten as rocket in British English and rucola in Italian. Arugula color refers to fresh wild arugula leaves: a saturated, slightly muted deep yellow-green with the matte finish of small notched leaves.
