Acid Hops

Latin acidus, sour — sharing root with English acrid and acerbic. Humulus lupulus, the climbing vine whose female flower clusters (cones) flavor beer with bittering oils and aromatic compounds. The color refers to fresh hop cones at harvest: a saturated, slightly cool yellow-green with the matte finish of papery flower bracts. Drier than vine.
