Latin victōriōsus, of victory — derived from victor (winner). Pistacia vera, the desert tree from western Asia whose green nut has been a delicacy in Iranian and Levantine cooking for at least three thousand years. The color refers to the cotyledon meat inside the shell: a soft, slightly muted yellow-green with the warmth of plant fat.
