Alit Pistachio

Old English ā-lihtan, to alight — past-participle of alight. Pistacia vera, the desert tree from western Asia whose green nut has been a delicacy in Iranian and Levantine cooking for at least three thousand years. The color refers to the cotyledon meat inside the shell: a soft, slightly muted yellow-green with the warmth of plant fat. Lighter than sage, deeper than mint, with the unmistakable association of a Sicilian gelato or a Persian pastry.
